Well it’s been almost two months which has gone scarily quickly. My two essentials have been my dog Meg and Radio 6 Music, which I have on all day. We’re lucky to live near a river so Meg and I head there first thing every morning. She’s learnt to swim this past few weeks and loves it. She’s a Border Collie and full of beans so needs lot of exercise.
I’ve tried to keep my mind active so I’ve completed some of the free government online courses; Professional Resilience, Digital Skills – Social Media and a short course on Food Science & Nutrition. I still enjoy catching up with client’s and candidate’s food posts on Instagram and getting inspiration for cooking at home.
I’ve tried quite a few new recipes and been doing a lot more baking. I’m a convert to the Naked Glory plant-based range and have been using that in everything from Fajitas to Curries to Cottage Pie & Chilli. Most recent favourite recipe was a very simple but delicious Cannellini Bean & Feta dip.
We have a Focus social and well-being team catch up via Zoom every week and it’s great to see everyone’s faces. Hopefully we’ll all be back to normal soon.
