Bakery category in the UK is worth £8.4bn (2022). Bakery manufacturing is complex and has an 8-stage process which includes mixing, fermentation, makeup, proofing, baking, cooling, slicing, and packaging.
All these areas are very important and will adhere to pre-set conditions and specifications to ensure the products are fit for consumption.
According to the Federation of Bakers the top three largest manufacturers in the bakery plant sector are Allied Bakeries who produce the brand Kingsmill, Hovis, and Warburtons. There are a variety of products that fall under the bakery category. These include bread, cakes, pastries, cookies, muffins, and pasties.
With such a wide variety of products this category is large. According to Statista.com in 2022 there were approximately 2720 companies that are producing bakery products, with about 20 manufacturers making bread and fresh pastry with a turnover of approximately £50m.
